Day 3 of Banana Split Week. It’s a winner too.

Banana Split Cheesecake.

Not any cheesecake….a delicious, easy NO BAKE cheesecake. I win right? Like if there were awards for best Banana Split desserts…I win. Yes, I’m a bit competitive. But c’mon….Banana Split Fudge….Banana Split Poke Cake….and now cheesecake.

I probably say this at least once every week….but this is my favorite dessert.

Yeah, that’s the problem with being a food blogger. You love everything. And each time I bake (or NO BAKE as the case might be), the recipes just get better and better.

From the sweet graham cracker crust to the cheesecake filling, these bars have everything you want.

And don’t skimp on those salty pecans either. I decided to go with pecans instead of peanuts…you know, to change this up, hehe. Actually, since I’m a Fisher Nut Brand Ambassador (no, this isn’t a sponsored post) I’m fortunate to have a lot of my favorite nuts on hand. And since I just love pecans I knew they would be great on top. Oh, I also added some into the crust. DIVINE.

I think after this Banana Split Week I realized TWO things:

1. I love banana splits. More than I thought I did. I love the sweet pineapple with banana, strawberries…just LOVE it.

2. I need to eat some lettuce. See number 1.

Banana Split Popcorn

Do you know what day it is?

Besides the first day of July…holy cow!  It’s July first!!!  Does anyone know where June even went?  Me either.  Good thing I take lots of phone pics to remember what happened.  I barely can remember what I ate for breakfast each day.

Anyway, back to seeing if you knew what today was.  It is the first day of Banana Split Week!  Raaaawwwwrrrr! And the crowd goes wild with excitement!

Ok fine, so I have over active imagination when I try to picture your excitement over such a fun week!

I am teaming up with Aimee from Shugary Sweets to bring you all Banana Split inspired desserts all week long.  I sure hope you are ready because we have an impressive line up of goodies!

Want to know something?  I am like the worst procrastinator ever.  You see, Aimee asked me oh, let’s say maybe 2 months ago if I wanted to do this Banana Split week with her.

Plenty of time to make and photograph these recipes you would think.  Except that this is me you are talking to.

Want to know when I started making these goodies?  Oh, the list started right away.  Then a month later I made one treat.  Then last week I decided I should really finish up because Banana Split week was almost here.  And by last week, I really mean Friday.

Procrastinate much?  Yeah…welcome to my world!

Oh, and this popcorn?  Nope didn’t happen last week.  This was yesterday’s project.  Thank goodness it was an easy one to throw together and photograph in under an hour.  I like to live dangerously close to the edge.  One of these days it will probably end badly for me.  Yikes!  Knock on wood!  I don’t want that to really come true!

Let’s talk about the popcorn instead of the impending doom of my procrastination.

You probably have all the ingredients on hand to make a batch of this delicious popcorn.  I used white and chocolate CandiQuik to coat my popcorn with.  You can also use chocolate chips or Almond Bark, if that’s what you have or can find.  

Use a few spoonfuls of dry banana pudding mix and dry strawberry Jello powder to flavor 2 bowls of melted white chocolate.  Now in case you were wondering, no it does not dissolve all the way.  The chocolate will have a slight grainy texture, but when it dries on the popcorn you will not even notice it.  I promise!

You can also add some yellow gel food coloring to make your banana chocolate more banana colored if you like.  Make sure you only use GEL food color though.  If you use liquid food coloring it will make your chocolate seize and harden.  It’s not a pretty picture and believe me, you don’t want to waste ingredients.

Give each bowl of popcorn a stir with the melted chocolate, lay it out on a wax paper lined tray, and refrigerate it for 5 minutes.  Go ahead and wash some dishes while you wait.  Or leave them all over the counter and sink like I did.  They will be there later when you decide to finally clean up :-)

Break apart the popcorn and toss it all together in a bowl.  It’s ready for gift giving or munching on at all hours of the day.  It makes a delicious midnight snack when you are editing pictures.  Not that I would ever procrastinate and do that.  Wink, wink!!!

Chocolate Reese’s Cheesecake

Desserts made with chocolate and Reese’s are definitely my favorite part of the meal.  Don’t you just want to sink your teeth into a Chocolate Reese’s Cheesecake?

 Is it bad that I can’t stop thinking of new ways to enjoy more Reese’s candies?  It has been awhile since I made mini cheesecakes, and I had some peanut butter cups to use up.

That sounded funny because usually Reese’s peanut butter cups don’t last more than a day in our house.  I used to have my kids trained to bring me their peanut butter cups…then they grew up and realized that peanut butter cups are like the best candy ever.  They now hide their Reese’s from me.  Silly kids :-)

Don’t they know that I have a cupboard full of candy, and there is usually some sort of Reese’s hiding in there.  I just make sure to put the spices and baking powder in the front, so no one will ever know what is in the very back.

Ok, now I realized after typing that, that I sound very selfish and that I have a candy addiction.  The candy addiction is a real problem, but I do share all my candy with my family.  Honest.  I just like to bake with it before sharing.

 This week I put together a chocolate cheesecake with a peanut butter mousse on top.   I was going for a take on my favorite Reese’s candy.  The peanut butter mousse is so light and fluffy!  I didn’t add any extra sugar to this layer because of the whole container of Cool Whip.  If you eat that part just by itself, you might think it isn’t too sweet.  But wait until you bite into one of these cheesecakes.  There is plenty of sugar in the bottom layer and in the candy on top to balance it all out.

Now a true Reese’s cheesecake had to have some peanut butter cups in it.  So I chopped a whole bunch of peanut butter cups (and ate a few while I was at it), then dropped a bunch of those chopped candies right on top of the cheesecakes.  They turned out so pretty.

I love all the layers in these!!!

It is a very good thing I started running again this week.  After eating a few of these, plus the extra candy, I probably should have run a little bit more.  That’s on the agenda for this week.

Does anyone have a piece of clothing in their closet that they have had for what seems like forever? I have had this skirt since high school, and I have loved it since I bought it. It is such a bright, pretty color yellow, and the beading detail adds just enough to the skirt to make it a little different. It was one of those Forever 21 finds that was super inexpensive and definitely worth purchasing. I love pairing it with a white top for a clean summery look.
